On the way back from work the tired Kolkata worker will often stop by at the street-side dhaba to buy an earthen pot of steaming egg torka and some roomali rooti. The tarka most likely comes from the city's Punjabi community that owns and operates famous dhabas such as Russel Punjabi Dhaba, Jai Hind Dhaba, Balwant Singh’s Eating House, Bachchan's Dhaba, and many more. These dhabas stay open late in the night and serve customers buttery tarka, rotis, chicken bharta, tandoori chicken, lassi, and tea.
Ingredients for Egg Tadka:
- Green Moong (Mung Bean)- 200 gms
- Cholar Dal (Spli Bengal Gram Dal)- 50 gms
- Eggs - 2 nos.
For cooking the pulses:
- Turmeric- pinch (1/8 tsp)
- Salt- 3/4 tsp
- Oil- 1 tbsp
- Water- 100 ml
Other Ingredients:
- Onion, chopped- 1 medium
- Ginger, crushed- 1 tsp
- kashmiri chili powder -1 tsp
- Garlic, crushed- 1 tsp
- Green Chillies, crushed- 1 tsp
- Tomato, chopped- 1 medium
- Turmeric Powder- a pinch (1/8 tsp)
- Red Chilli Powder- 1 tsp
- Coriander Powder- 1 tsp
- Cumin Powder- 1/2 tsp
- Garam Masala Powder- 1/2 tsp
- Oil- 2 tbsp
- Butter- 20 gms
- Coriander leaves, chopped- 2 tbsp (optional.)
